I get more requests from friends, family, and coworkers for these cookies than any other dish I make. I make them often, and they are ridiculously EASY. Four simple ingredients (plus salt) – that’s it. I always have the ingredients for these cookies in my pantry so I can make a batch for myself or to share.
Ingredients
4 Ingredient Cookies
Sweetened flaked coconut – I prefer the sweetened coconut but regular flaked coconut could be used.
Sweetened condensed milk – I keep several cans of this in my pantry. I pick up a few cans whenever they are on sale.
Almonds – I prefer slivered almonds for this recipe, but sliced almonds will also work. I have used sliced almonds before and I felt like the coconut overpowered the flavor of the almonds. I also toast my almonds slightly in a pan on the stove. It gives the almonds a deeper flavor. I store my almonds in the freezer to maintain freshness. The oil in nuts can turn rancid if kept in the cupboard too long
Chocolate chips – I prefer DARK chocolate chips, but you can absolutely use semi sweet chocolate chips, if thats what you prefer. If Im making smaller cookies (using my small cookie scoop) I will use mini chocolate chips.
Making the cookies
Ok, are you ready for this? Its pretty difficult… Mix all 4 ingredients + ½ teaspoon of salt in a large bowl. Then scoop (I use either a regular or small size cookie scoop – makes cookies more uniform and less mess.) onto a cookie sheet lined with a silicone baking sheet or parchment paper (sweetened condensed milk is STICKY). Wet your fingers to shape the cookies into a mound. Bake at 350 degrees F, for 12-14 minutes or until the edges are starting to turn golden brown. Baking time will vary with cookie size. Allow the cookies to cool slightly before removing from cookie sheet to maintain their shape. Thats it! Only about 20 minutes from start to finish for FRESH and DELICIOUS cookies!
RECIPE
*14 oz bag of sweetened flaked coconut
*14oz can sweeted condensed milk
*2/3 Cup almonds
*2 Cups chocolate chips
** ½ tsp of salt(optional)**
Preheat oven to 350 degrees. Mix all of the above ingredients in a large bowl. Scoop cookies onto a lined baking sheet (silicone liner or parchment paper). Shape cookies into mounds with wet fingers (to prevent sticking). Bake for 12-14 minutes. Allow to cool slightly before serving.
Approx. 110 calories per cookie.
