If you have checked out any of my other recipes (Thank you), you probably have noticed that they are ridiculously simple. While I love cooking and baking , I do not enjoy recipes (or crafts) with a million hard to find ingredients or multiple steps. To quote the infamous Sweet Brown “Ain’t nobody got time for that!”. I work full time Monday through Friday, volunteer a few hours on Sunday and am solely responsible for maintaining my home, yard and animals. So for me, SIMPLE is key. The prep time for this recipe is 5 MINUTES.
If you are wondering what the difference between a buckle and a cobbler are, you are not alone. I had to do a little research myself. A buckle is a cake like batter topped with fruit before baking, a cobbler is fruit topped with a cake like batter before baking. So, there you have it. This recipe is very versatile. Any frozen fruit can be used. I have made it in the past with frozen mixed berries and it was also delicious. Keep in mind the baking time will vary with the amount of frozen fruit you use. I set a timer for 55 minutes and then check frequently until its golden brown and bubbly. Also, I have found that purchased frozen peaches are usually more tart (and less flavorful) than peaches that you prepare and freeze yourself, so I sprinkle about a tablespoon of sugar over the top just before putting the buckle in the oven. If using sliced peaches, chop the slices into bite size pieces.
Peach Buckle – Prep: 5 minute, Bake 55-65 min approx.
Ingredients:
1 cup sugar
1 cup milk
1 cup flour
1 stick butter (½ cup) MELTED *** I always use salted butter for baking***
2 cups frozen peaches
1. Mix together sugar, flour and milk until just combined. Mix in melted butter. Pour batter into a 8 x 8 inch baking dish sprayed with non stick spray. Sprinkle peaches evenly over the top of the batter. Sprinkle fruit with 1 tablespoon sugar (optional).
2.Bake buckle at 350 degrees F for 55-60 minutes or until golden brown and bubbly.
This recipe is so easy and delicious. Especially when enjoyed warm from the oven and topped with vanilla ice cream or fresh whipped cream. Yum!
